It’s no question that Chip and Joanna Gaines are interior design mavens. We’ve all watched their journey unfold on HGTV, and while Fixer Upper may be ending, it’s certainly not the end for these two. We were thrilled to hear about the announcement of Joanna’s first cookbook, Magnolia Table, and just had to try out one of her recipes!
One thing that is always welcomed at the studio is dessert. We aren’t a picky group of gals, so whether it’s salty, sweet, chocolatey, fruity, we’re game. With the arrival of this beautiful Minnesota spring weather, we thought it would be the perfect opportunity to whip up something citrusy and fresh. We chose to make Joanna’s lemon pie which only took 20 minutes to make and was completely gone in half of that.
Just like her design aesthetic, this recipe was light, airy, and homey. It got us so excited to try out more recipes from Magnolia Table and we hope this recipe inspires you to create something delicious in your kitchen as well!
Lemon Pie Recipe
INGREDIENTS
Nonstick spray
1 1/2 cups crushed graham crackers
1/3 cup sugar
6 tablespoons butter, melted
3 cups sweetened condensed milk
3 egg yolks
2/3 cup lemon juice
Dash salt
1 cup whipping cream
2 tablespoons sugar
1 teaspoon vanilla
Lemon slices, for garnish
Lemon zest, for garnish
Mint sprigs, for garnish
DIRECTIONS
Preheat oven to 350°F. Coat a 9-inch pie plate with nonstick spray. In a bowl, combine crushed graham crackers and 1/3 cup sugar. Stir in melted butter. Press cracker mixture into prepared pie plate. Bake for 8 minutes.
In another bowl combine milk, egg yolks, lemon juice, and salt. Beat for 4 minutes. Pour mixture into baked pie crust. Bake for 10 minutes. Cool pie for 30 minutes. Place in the refrigerator at least 1 hour or until set.
In another bowl, combine whipping cream, the 2 tablespoons sugar, and vanilla. Beat on high speed until fluffy. Spread on cooled pie. Garnish with fresh lemon slices and mint.
Devour!
