One of our favorite aspects of a new season is trying out new recipes! For Spring, those types of recipes tend to include healthier and fresher ingredients. Today, we’re sharing one of those meals – this Kale Caesar Salad you’ll be making on repeat all Spring and Summer long. We guarantee it!
We love a Caesar salad not only because of how insanely delicious it is but also how versatile and easy it is to pair with your favorite protein. Whether it’s a last-minute dinner or an opportunity to wow your guests, our version of this classic salad is sure to please.
1 bunch of kale
1 tablespoon red wine vinegar
1 teaspoon Worcestershire sauce
1 tablespoon dijon mustard
1 clove fresh garlic, peeled
1/2 whole lemon, juiced
1/2 cup olive oil
1/4 cup freshly grated Parmesan
1 pinch of salt
Freshly ground black pepper
1. Combine the dijon mustard, vinegar, Worcestershire sauce, garlic and lemon juice in a blender and blend.
2. With the motor running, pour in the olive oil slowly until smooth.
3. Add the parmesan, salt and pepper and blend again.
4. In our Henley Large Mixing Bowl, toss the kale and two-thirds of the dressing.
Let the kale sit for 3 to 4 minutes to soften and to soak up all that yummy dressing!
